Who needs traditional, ugly chicken salad when you can have this? It’s everything a salad should be- colorful, textured, and delicious! This is a great way to use an avocado that’s perfectly ripe, or one that’s just a little over the hill and mash it into the dressing for a creamier salad!

  1. Cube the chicken, avocado, and red onion. Chop the cilantro finely and cut the corn off the cobs. Combine all in a bowl.
  2. Whisk together Dijon and white wine vinegar, then add olive oil and whisk until emulsified.
  3. Pour the vinaigrette over the salad and toss to coat. If desired, drizzle with Colavita Balsamic Glace and enjoy!
